There are hundreds of types of bamboo shoots in Vietnam and are used by Vietnamese people as daily food, in which there is a very special type of bamboo shoot closely associated with the life of the Muong ethnic group, which is the Buong bamboo shoot.
Buong trees are abundant in the Northwest region of Vietnam from Ba Vi mountain to Dien Bien, Lai Chau but are most concentrated in Kim Boi, Lac Son, Lac Thuy, Tan Lac districts of Hoa Binh province, where there are many Muong people live. The tree has a straight stem, no thorns, few branches, big leaves and is especially one of the few types of bamboo shoots for the largest tubers in the bamboo family. The tubers are quite round and thick and have a very delicious golden color when boiled. Fresh Buong bamboo shoots have a sweet, aromatic and very firm taste, so it is very delicious when using sliced bamboo shoots to cook, and it is also convenient to process into vegetarian products to imitate beef and pork. Large pieces of dried bamboo shoots, called dried pig tongue bamboo shoots, specialize in cooking for parties or celebrating Tet in many families in Vietnam.
Buong bamboo shoots cooked when fresh or dried are delicious, but especially delicious when making sour bamboo shoots. Sour bamboo shoots are the best because of their firm, sweet, aromatic characteristics and large, bright yellow-white tubers. Many ethnic groups such as Thai, Dao, Tay, Kinh, Muong all make sour bamboo shoots from some tubers such as “Bamboo”, “Hoc”, Bat Do”, “Luong”, “Buong”… but the way of making sour bamboo shoots of Muong people with yellow Buong bamboo shoots is literally “the top of the top”. In the middle of the sour bamboo shoot season (August lunar year every year), when the bamboo shoots reach their best and greatest, the Muong people start making sour bamboo shoots. If it's simple, people just need to wash, chop and put it in a crock pot or glass to have popular sour bamboo shoots eaten all year round or sold at the roadside, market corner… Muong people for hundreds of years have known how to not ferment too much – causing great acidity, bamboo shoots will be soft and not delicious – by washing bamboo shoots with spring water (Soft water – no calcium ions which make bad colors), dipping the jar of sour bamboo shoots into a stream near the house, keep bamboo shoots always at a low temperature below 20oC and away from sunlight. After a few months of taking it up, we have a jar of white bright yellow bamboo shoots, fragrant and crispy, sweet and sour, wonderfully sweet.

User manual:
Ready to eat when mixing with salt, vinegar and sugar. Cook in soup, hotpot with other ingredients such as fish, meat (chicken, goose, duck, pork ribs,…), seafood. It is also used in vegetarian cooking. Can use sour bamboo shoot juice to increase acidity.
